Collecting Self identification Questions in Onboarding

Our employee information form requests the Voluntary Self Identification Questions about Ethnicity, Marital status, and **** that we collect on the back end after we hire somone.  The problem is the information is not being completed.  I can not make each field mandatory in onbaord as they can only pick one ethnicity, one marital status and one ****.  How are other companied handling this?  Can you make the entire section "Red" so it has to be completed?
