Capturing, storing and reporting on diversity globally

Hi there
I have recently moved from a UK only implementation of Taleo to a global one and am encountering issues around the capture/storage and reporting of diversity data to meet with the legal requirements of all countries. Our head office is in the US and we in Europe have different requirements for our diversity data.
Has anyone else encountered similar issues and if so can they share information on how they have worked with Taleo to make it work for everyone? Basically in the UK we want to capture gender, ethnicity, disability and sexual orientation but not make it visible on the front end and only report on it, with the exception of gender which needs to be present for our interface to our system of record.
