Notification when an onboarding packet is completed

I have a client who would like to be able to receive a notification when an onboarding packet has been completed. I thought we might be able to assign a notification to the onboarding workflow status of Complete, but it doesn't seem to be available anywhere.

Does anyone know of a way to achieve this?
