Making changes to onboarding documents post-eSignature

Can a change be made to an already eSigned activity that resets the signature process?Content
If in an onboarding employee has already eSigned an activity and a change needs to be made to one of the fields on the form by the assignee AFTER the fact can the assignee make the change and have the employee re-alerted about the change and open the form up for a new eSignature?
For example// if the employee signs off on their confirmation of employment at a rate of $25/hour but the assignee made a mistake and it should be $20/hour, can the assignee update the employee field which flows onto the already issued pdf and alert the employee to re-eSign the form without having to assign a new activity (which can't be done under the same packet if the progress is 100%).
