Rendering £ sign in Taleo transitions Offer letter templates

When we include a £ sign in Taleo offer templates, the HTML source code auto-converts this to an unacceptable sign using &pound code

Has anyone been able to render a £ sign in Taleo offer letters please?  We've worked around all other issues with special characters by typing directly into the Taleo template (rather than pasting from another source), but the one character that we can't solve is the UK currency £.  Whenever we use £, Taleo auto-converts it to a wingding which renders onto the letter preview as a black diamond with a ? in the middle.

Our customer is not happy with the "GBP" alternative....  Has anyone else rendered this £ please?
