Problems when Duplicating Onboarding in 17.3

We recently upgraded our staging environment to 17.3 and are close to our production upgrade as all our standard testing of the new version worked.

However, simultaneously in staging I am duplicating/modifying a new hire process. To do this I duplicated one that we went live with recently, modified it to remove all unneeded items and changed a few transitions to fit this segment of our hiring. When I began running a test candidate through I noticed that items that had been removed from the process map are listed in the steps of the test candidates process, while other ones that were added/changed are missing. Has anybody run into this with 17? Any solutions?
