Using Learn for a Conference

One of our colleges is having a day long conference with multiple sessions to pick from. Has anyone used Learn to host a conference? What advice do you have? It seems like there's  multiple ways to set this up and I'm not sure what way to go with. I could use tracks to post the morning and afternoon session choices or I could use training offerings.  Is there a way to restrict users from selecting more than one session for a certain time period? I'd appreciate any lessons learned and advice for anyone that has done this. Thanks!
