Receipt Method does not default into manual AR transactions from the Customer Account or Customer Site.  

Response to an SR - This is not expected to default post the CVV uptake in REL12.It was a design decision made by Development. 
As part of CVV uptake, receipt method was determined to be only select-able on a completed invoice, hence not defaulting anymore. 

There is a document available stating that the same is also true regarding Imported transactions.  Receipt Method Not Defaulted on Imported Transactions with createSimpleInvoice (Doc ID 2327803.1)
