Difference in display between fluid recruiting and the flash version?

I am sure this is really simple and I am being daft, we have used Recruiting (flash version) for some time but when we look at using fluid recruiting the creation of a requisition brings up different values initially.

Can anyone explain why this is and also where in the configuration we would need to go to change the value of these fields please.
