How to personalize the OM Order Entry screen to set a filter on Customer Field

The business requirement is to set a filter to limit results returned on Customer Field.

We have a business requirement to filter or limit the list of Customers that can be seen/visible to the Order Entry Specialists during Order Capture on the order entry screen. There are volume of customers that the business deals sales transaction with and does not want everything to be searcheable on the Customer Field on the OM Screen. 

How can we set a personalization on the customer field to apply a sort of filter and limit the lists of Customers that can be selected by the Order Entry Specialist based on certain criteria.
