Updating Diversity Data on a Candidate

Hello, our team is allowed to make a visual identification of a candidates gender and ethnicity during interview and update accordingly - however, the Taleo diversity block does not allow you to access/update candidate diversity details.
Any ideas on a workaround? Not ideal, but can we update through TCC? We like using diversity block v. UDF's for other reasons but the campus team really wants to be able to update based on visual identification after interview.
