Onboarding - modifying workflow

We’re finding the Onboarding component to be very cumbersome. The process to modify the workflow takes months to complete.  By the sound of it, we’ve configured Onboarding in a way that does not break down by subprocess, so this is part of the challenge, but even with a subprocess workflow, it sounds like it would not be a quick change should we have one.  It would be helpful to know if other companies have this same challenge and how are they approaching it.
