Add custom tags to template uploaded to DocuSign

As per below oracle notes, we can add custom tags to the template that we upload to Docusign. Can I get some guidance on how to add custom tags, basically I want to auto populate Address, Salary info when the employee attempts to sign the offer letter.

I have only Demo login for Docusign. Do I need to have Developer access on Docusign to add custom tags/fields.

Map fields from the new hire record in HCM to fields in the document in DocuSign. You can use predefinedfields or add custom fields to the predefined fields list. These details are sent from HCM to DocuSign.◦
