Customizing Banking ESS Fields

Our payroll vendor needs additional information to be passed for direct deposit details. When comparing the fields available for entry in the administrative page Personal Payment Methods against the employee self service (ESS) for Payment Methods, the ESS has limited fields. How can we customize the ESS entry to allow for additional fields and to make certain fields mandatory? Thanks!
