offer letter template is showing wrong date when "hire date" is formatted as "date" vs "regular text

After 21A we've noticed something odd. in the offer letter the hire date is showing a date of a day before the actual hire date. After research, we have found out the issue is with the offer letter template, in which the "hire date" field is formatted as "date", when we change that to "regular text" the date is showing accurately, but the formatting is off. any ideas as to how to address this?
