OIC changing & to & when sending payload to Rest Adapter

Hi,

I have variables that I set with &, ie &InvoiceNumber=ABC in the Assign Mapper.

 

When I run the integration the Rest Adapter is erroring due th the & being changed &

 I Have tried  <xsl:value-of disable-output-escaping="yes" xml:id="id_309" select="$Year"/> but it seems to not be working.
