updating journey tasks

Hi all,

We assigned a journey task just to complete attestations for COVID Vaccinations right now.  What I dont see is a way for an individual to go back into the journey and reupdate if necessary.  Is this possible?  or what is everyone doing if we need to update journeys.  It will be a huge administrative task to reassign these things so hoping theres another way.
