Ethnicity Reporting

We have a requirement to compare applicant ethnicity to hire ethnicity in ratio form. This would help to see if we have bias in hiring. Example, we hire 90% of Asian candidates but only 30% of Hispanic candidates (made up numbers).

It appears that we cannot report on applicant ethnicity (or haven't been able to this point) until the applicant is actually hired. In the attached image you can see that all ethnicities are showing as 'undisclosed' except for two people who have been hired (we've just gone live).  However, we converted a few hundred candidates and loaded ethnicities for all of them.
