Change Default Assignee in Approval Route

Summary:

I notice that my approval processes automatically get defaulted to the Recruiter Assistant User. I have removed any reference of them from the approval rules, but the "After approval Process, assign to: " still defaults to the Recruiter Asst user. Is there any way to change this so that it points back to the Recruiter instead?
