Custom LOV fields on Contracts overview page. Mapping of employees possible or not?

Hi Team,

We have enabled the custom fields (LOV-Fixed choice list) on the contracts overview page. We wanted to map the employee data (like Employee names) on the LOV. As you can imagine, the list of employees needs to be fluid, due to turnover.

Please let us know if this kind of mapping is possible or not. Or we should consider that we do not have any option other than creating the lookup types/codes manually while creating the custom fields?
