How to schedule Extract to run on specific dates?

Summary:

We built an Extract to generate the data files to integrate with a Payroll system in Mexico.

The Payroll system (vendor) required to receive the data files on every Friday, but not always - for example, 2022-09-16 (Friday) is México Independence Day, the vendor expected to receive the data file on 9-14 Wednesday instead of Friday.

Do you have any idea how I could schedule the Extract? Thank you!
