Update sender email address for email notifications

Content (required):

We have email notifications enabled so users are getting email notifications for transactions that have an associated notification. However, the "from" email address is a generic Oracle email address associated to the POD. For example if I am in a certain instance it will be "[instance name]@workflow.mail.cloud.oracle.com"

Is it possible to change the "Sender" email address to something else? If so, how do we do so and what is the navigation?
