Defaulting Rules to be configured for defaulting several field with values

Content (required):

We have a requirement to default values in several fields like Payment Terms, Line Types, Shipping Warehouse etc. We used to have a single functionality of Defaulting Rules in EBS.

However, in cloud, I see 3 Options. How these 3 options differ from each other and which one should one choose to default the correct values.
