Enable a open self describe gender field and match the data with Core HR

Hi everyone, we want to enable a open self describe field to provide the option to the candidate to fill the information about their gender. We managed the creation of an EFF in the Job Application page (in career website), however we couldn't find a way to match the data with Core HR and also to match the Legal Requirements in some countries, regarding the Government report, that only allows two values (Female and Male).

Does anyone have any advise on this?
