What is the datatype used to store interview feedback responses in ORC?

Summary:

We are looking at details around the field limits used to store feedback requests in ORC against an interview questionnaire. All tables in recruiting folder display datatype as 'varchar' along with length and precision details. Our extracts are failing due to data captured in Japanese language in the feedback form. Wanted to understand if it stores data in bytes or in characters in the table.
