Employee Enterprise Onboarding - Journey Task for Preferred Start Date

Summary:

We have an Onboarding Step Journey Task within our Enterprise Onboarding Journey for External Pending Workers that allows them to select their preferred start date after our HR Specialists indicate they can (through a preceding task.) This task type is set as a questionnaire, which is composed of a question/response type of date. It allows users to select a date between a minimum and maximum value. However, I would like to limit the day of the week that can be selected to only Mondays.

Is this possible through a configurable form? If possible, what would be the best approach?
