Timestamp for consent

I'm a little stuck. I'm adding a timestamp to our forms when people optin or give consent but I only want it to update if blank since I don't want to overwrite the original optin date. what is the best way to do this? I was trying in the processing steps but i'm not seeing the rules i'm looking for.
