Collaboration Messaging Framework - CMK 'original message' versus 'Transformed message'

I am trying to test configuration for CMK to send XML invoices outbound.

I have noticed that for Collaboration message definition "OAGIS_10.1_PROCESS_INVOICE_OUT_V2" I am seeing a difference in the specific fields included in the Original Message versus the transformed message and what is received for example if the delivery method is email to myself

I would like to understand why? And if the fields I require like some additional configured flexfield with context sensitive segments for attritional attributes (fields) on the Transaction itself are on the original message how do I get them on the transformed message?
