Prevent inventory exhaust with Supply Allocation Rule

Hi,

we have big customers that may buy all our on hand of specific item

We would like to prevent this situation, in order to keep stock to be able to fulfill smaller orders

looking on Supply Allocation Rule as a solution, but still not clear how to use it

can you instruct , or suggest any other approach?
