Email notifications to Quality Issue Workflow Approvers

Summary:

We have Inspectors who self eSign their own inspections. To avoid emails to all Inspectors tasked to do eSignatures, ' Test Notification Email Address' in BPM Worklist Administration is set to a holding email address. Now,... with Quality Issues we use Workflows that have Approval steps embedded, Approvers assigned to approve need to get email notifications. How can we override the 'holding' account' to push emails to Workflow approvers according to their work emails set up on their employee records??
