Oracle Linux 7: How to Change Current UEK Kernel Release To a Different UEK Release

Goal:

Oracle Linux 7 was distributed in its 1st release 7.0 with kernel UEKR3. After some releases it started to support other higher UEK releases: UEKR4 (in 7.3), UEKR5 (in 7.5) and UEKR6 (in 7.7).

When OL7 is freshly installed, the default UEK Release distributed for that minor release is installed, but once you update the system to another version 7.x using yum update, the UEK version in use is not upgraded to a higher UEK version, unless explicitly configured to do so. The goal of this procedure is to explain how to change the default UEK in use.
