What is the difference between the different Collaboration Message Definitions

Summary:

We are in the process of going through using a User Defined Service Provider to set up and use Collaboration Messaging to deliver outbound and receive inbound messages to the Service provider.

What is the difference between the different message definitions you see in the UI when you configure a Message from the dropdown list?

I also have seen that there seems to be a difference between the payload and the transformed message - some information is not showing in the transformed message when I did some brief testing using email delivery although we would want to use webservice.
