How to default the product category on a receivable invoice line item under tax determinants?

We are creating an invoice from subscription management. We have items defined to create invoice in AR. Question is, when the invoice is created in AR which has item populated on the line, how to default a specific product category under tax determinant section? Is there any setup that helps 'Defaulting the product category for an item' ? We have tax driven based on this.
