hiring manager read only

Summary:

Is it possible to make the hiring manager field read only. I don't see an read only option in page composer. I understand that we can use EL expressions within the read only section to accomplish this. However, I don't see that option for the hiring manager field like other fields. First screenshot, is of the hiring manager field in Page composer. Second, screenshot shows another field with the read only option in page composer.
