Pre-production email notifications missing information on who it was sent to originally

in Expenses

Summary

Our pre production environments sends all outbound emails to an email inbox.

Since the to: <email address> is now the pre production email inbox it is difficult to know who the original email/user the notification was meant to be sent to.

Is there a way to discover who the workflow notification was originally sent to before it was replaced with the pre-prod email inbox?
