Editing Skills Importance Drop Down Choices

I am looking to see if it is possible to edit the list of values in the "Skills Importance" drop down that is used on the Job Profile and in Recruiting. There are several choices, but it doesn't seem necessary and also causes confusion, having low, medium, and high as well as important and very important. We are looking to remove some of those choices to make a more simplified list.
