Automatically default the Overriding Approver for a requisition dependant on Category Name

Summary:

Hello,

I would like the Overriding Approver on a requisition to be automatically entered dependant on the Category Name that is chosen when raising a new requisition.

This would be so HR categories automatically are assigned the overriding approver X whereas Finance categories are automatically assigned the overriding approver Y.

I believe I may be able to do this on the Manage Mapping Sets screen? Please can someone advise if I am on the right tracks or if there is any rescource that would be useful?
