How to calculate resource availability and utilization for Manufacturing

Many work orders have not been processed through planning, and I would like to calculate the resources utilized over the past few years. I am looking for data related to entire resource utilization, not just based on planning.

When I check through the supply planning system, it only shows future records and those based on planning, which does not cover the historical data I need. Could anyone guide me to any reports or specific table names where I can view resource availability and determine the utilization for these work orders, including both planned and unplanned orders over the past few years
