About order header and line status

Where are the order header and line status defined?
I tried managing order references but couldn't find it.
A customer has requested to know the status and meaning of all statuses.
The order header and line status are displayed as a value set when searching, but there are so many that I can't check them all.
Please tell me the name of each status value set and how to access it.
