Payment method in order management

Hi all,

Can someone tell me from where I could pick the payment method field mentioned at the front end of the Order management page?

I have checked for the table "DOO_PAYMENTS", but the table is empty. Please let me know if someone knows from where to pick the payment_method_code.

we have requirement of order needs to have credit card as payment but currently we have On Account as defaulted on the order.
