How can we test recruiting content library items in a non-Prod pod

I am adding a new content item in the Recruiting Content Library and I need to know how to test this in a non-Prod pod.

Content Item Category: Send Invite Notification

When I click the Invite button, it confirms that it sends the invite email, but I don't receive it. My email address is correct, the content item is set for both internal and external, and notification tracking is enabled.

Where can I see this notification in the application, i.e., history? How can I get the email notifications to work in a non-prod pod? I'm sure I'm missing something obvious.
