how to make "Hire date" read only for hr admins while converting a pending worker

Hi we are trying to find a solution to make the field "When is the employee hire date" become read only. HR admins often changes this during conversion which will triggers journeys and the internal decision is to let them change the date before Conversion. Is there a method
