Recording Observed Gender and Race/Ethnicity

When a candidate has chosen not to self-identify and comes onsite for an interview, the recruiter may make a visual observation of the gender and race/ethnicity. If that happens, where do your recruiters log the visual observation data? Do the put it in Taleo or record it through another means?
