Tracking The Aging Movement of Invoices

Hello

I would like to be able to track the aging movement of our open items.  So for example today we have 500 items in the category current and 400 in 31 - 60 days.  Some of the current will move into the 31 - 60 day category tomorrow, I would like to track which ones have changed category overnight.

Is there a simple way to do this?
