Can we preview the dunning letter generated as part of a Strategy Work Item before sending it to the

My client has the following requirements regarding dunning:

Generate a dunning letter in draft --> Review the letters to check if the letter needs to be sent or not --> If the dunning letter should not be sent to the customer, exclude it from the final run.

Questions:

1. How can we generate a dunning letter in draft when it is part of a Strategy Work Item?

2. I understand there is an option available to exclude the customer from dunning. But this would exclude the customer permanently unless manually modified? The requirement is to exclude the customer from only that specific dunning run and not permanently? Has anyone implemented this functionality and how??
