Successful Install/Config of OID...Now What?

I hit the right combination of whatever it took to get a clean run of config.sh after installing Weblogic 10.3.4, OFM 11.1.1.2 and patching to 11.1.1.4.  As usual, I have been directed to many different docs, depending on what I need to do.  I'll get to those but to do a quick test of all the processes that are currently running, how do I properly shut them all down and restart them?  Do I need to change any PATHs or environment variables anywhere?  In my experience with WebLogic server, I needed to change the JAVA_HOME in a setEnv.sh file for
