Can somone help me adjust the UNDELVRD setting in workflow manager?

We are getting a lot of mail bounnces in our EBS environment and I'd like to adjust the tags we use for UNDELVRD, but it doesn't seem to be an option in the workflow manager interface.  Do I need to adjust the file in linux?  I've checked the documentation and this option is there but I can't seem to choose it in workflow manager.  We're using Microsoft Exchange 2010 as our email system and EBS doesn't seem to catch the bounces correctly.

I've uploaded a copy of the screen.  UNDELVRD is seen from the file in the O/S but it's not available in the drop down.
