Where can we update the %n parameters for new Message Catalog entries?

Hi,
Where can I find the place to modify the parameter list %n values that pull in for various Message Catalog entries. We have new references emails that we are setting up and I have 3 % values that should pull in dynamically based upon the applicant's information but I can't find where to modify which fields pull and the %2 and %3 values are pulling in the wrong values.
