RMS 12.0.11 system_variables and stock ledger batches

We are going to start scheduling the stock ledger batch jobs which include saldly, salweek, salmth, and saleoh. These rely on the data setup which is in system_variables table. We have been running RMS for 3 years so many of these dates are old.

My question is, what is the process or best approach to update these table values? Is there a calculation I can run on go live date to determine what I put on in these fields? For example LAST_EOM_DATE can be calculated by getting the last date of the previous month. Or is there a better approach maybe?
