How to change cloned instance Email from header?

We are using EBS version 12.1.3

We just cloned EBS production to development.

While the workflow email address setting has been changed to development server email address, however, the from section of the email still says EBS production. Where can I go into EBS and change this from section? Gurus, please advise. Thank you very much.
